Inspired by great fresh ingredients, our small neighborhood bakery on a corner in downtown Chicago began creating artisan breads and freshly baked sweets. And upon a little success, neighbors began to ask us for sandwiches made with that fabulous bread, followed by homemade soups and salads, and even made-to-order scramblers. The traditions that were created years ago are still practiced today. You will find real kitchens where over 40 types of fresh herbs, fruits and vegetables are chopped daily. Corner Bakery Cafe was founded in 1991 by Lettuce Entertain You Enterprises, a Chicago-based restaurant group. It was sold to Brinker International in 1995.

• Jim Vinz had been with the company in various capacities since 1995, and was promoted to COO in 2005.
• In 2005 Brinker sells CBC to Il Fornaio (America) Corporation.
• In 2006 Jim Vinz was promoted to president.
• Roark Capital Group bought Il Fornaio in 2011.
• In 2020, the Corner Bakery Cafe was purchased by Pandya Restaurant Growth Brands, LLC, a subsidiary of the Rohan Group of Companies. Mike Hislop is the chairman of the board. Mike came on as COO after the sale to CBC Restaurant Corporation.
• On February 23, 2023, Corner Bakery Cafe filed for Chapter 11 bankruptcy.
