Cheesy Tomato Chicken
Cheesy Tomato Chicken - Put some slits into a chicken breast and fill with thick slices of mozzarella cheese and tomatoes then bake. Mix Marinade: 2 tbsp EVOO, 1 1/2 tsp Pink Salt, 1 tsp Pepper, 1 tsp Paprika, 1 tbsp Parsley, 1 tsp Cayenne Peeper. Slice chicken but not all the way through. Put Chicken Breasts in oven safe dish. Cover Chicken with the Marinade. Slice 8 oz Mozzarella. Slice 3 Roma Tomatoes. Slip in the Cheese and the Tomatoes. Bake 400 F for 40 minutes.

Makes 2 Large Chicken Breasts
- Mix Marinade
- 2 tbsp EVOO
- 1 1/2 tsp Pink Salt

These are fantastic.
A tomato fell off onto the plat so to get it out of the way for the picture I ate it; I think it was the best tomato I've ever had! Well, not really sure if I've ever had a baked tomato with seasoning on it but man it was good! Chicken was also great, cooked perfectly could not be more juicy and had some spicy flavor.

Next Time
- Slightly bigger dish - these fit fine initially but by loading them with cheese they completely wedged inside the dish and still had to squeeze the tomatoes in there.
- Forgot to slice the tomatoes in half - that would have made things easier as well
